Food Friday: Easy Peasy Curry

Once again I'm a little late with my Food Friday post but no matter; it's got to be Friday somewhere right?? ...probably not, but that's okay.


The other night, Jack and I were jonesing for some curry and since we're attempting to save our cash for the big wedding, we were going to have to make this at home. Since we already a roast chicken from the grocery store taking up fridge space, we ran out to the grocery store to grab some curry paste and naan bread. 

INGREDIENTS:
  • Chicken, about half a roast chicken
  • One small potato, diced and boiled
  • One small potato, diced and boiled
  • 1 cup, green beans
  • 1 Tbsp oil
  • 1 Tbsp butter
  • 4 Tbsp curry paste
  • 1/3 cup water
  • 3 Tbsp cream


Making this meal was super simple and super quick. I'm guessing had we not had pre-cooked chicken and pre-mixed curry paste on hand it may have been a different story.

We began by heating the butter and oil in the pan and putting the water on to boil for the potatoes. We then threw the chicken into the pan to cook while the potatoes continued to boil. Once the potatoes were ready we tossed them into the pan along with the green beans to fry for 5 minutes.

Next we stirred in the curry paste, letting it fry for a couple minutes before adding the water and cream. When everything is combined let it simmer for another 5 minutes. 


Serve up with naan bread or rice, or both!



Notes:
I'd probably skip the green beans next time. 
As much as I love getting my daily veggie quota, they messed with the texture of the entire dish.

I would make this with roast chicken from Superstore every. single. time! The way they roast it allows the meat to be extra tender and perfect for a curry.
